Ingredients:
- 4 pitted dates soaked in hot water until soft (save water)
- 2 TBS (or less) of date water, just enough to blend into paste
- 2 mashed ripe bananas
- 1 cup rolled oats
- 1/3 cup ground almonds
- 1/3 cup ground pecans
- ½tsp vanilla
- ½tsp baking powder
- 2 TBS coconut oil, melted
- ½tsp cinnamon
Preparation:
- Pre-heat oven to 350
- Soak dates in boiling water until soft (reserve soak water)
- Place jar of coconut oil in a bowl of hot water to melt enough for 2 TBS
- Mash bananas in a bowl
- Food process almonds in a meal
- Food process pecans into a meal
- Process dates with vanilla in a food processor adding just enough soak water to make a chunky paste
- Add ground nuts, oats, date paste, baking powder, cinnamon, & coconut oil to the mash banana
- Spoon onto a parchment paper lined baking sheet
- Bake at 350 for 12-14 minutes.
- The cookies will set up more as they cool. So transfer to a cooling rack and wait at least 10 minutes.
