Ingredients
2 TBS Butter
2 Garlic cloves, chopped
1 Onion, chopped
1/2 tsp Turmeric
1 tsp Garam masala
1/4 tsp chili powder
1 tsp Cumin powder
1 lg Diced canned tomatoes
1 cup Red lentils
2 tsp Lemon juice
2 1/2 cup Vegetable stock
1 1/4 cup Coconut milk
Salt & pepper
Chopped cilantro to garnish
Preparation
- Melt butter in a large pan & saute the garlic & onion for 2-3 minutes, stirring. Add spices and cook for another 30 seconds.
- Stir in tomatoes, red lentils, lemon juice, vegetable stock, and coconut milk and bring to a boil.
- Reduce the heat and simmer for 25-30 minutes until lentils are tender.
- Season to taste, garnish with cilantro, and serve with naan bread.
