Ingredients:
- 1 red onion, diced
- 1 medium russet potato, pealed & diced
- 3 medium yams, pealed & diced
- 1 TBS chopped ginger
- 2 TBS chopped garlic
- 1 TBS curry powder
- 1/2 tsp cumin powder
- 1 tsp sea salt
- 6 cups of Pacific veggie broth (or homemade veg stock)
- 200 ml coconut milk (small can)
Preparation:
- Saute onions for about 5 mins
- Add garlic & saute another 2 mins
- Add ginger, & spices & mix in.
- Add diced potato & yams
- Cover with broth & simmer until veggies & soft.
- Blend in batches in you blender.
- Add your coconut milk.
