Ingredients:
- 1 cup dry red quinoa
- 2 cups water
- 1 19 oz can black beans
- 1/2 yellow or orange pepper
- 1 tomato
- 3 scallions
- 1/4 cup lime juice
- 1 cup fresh chopped cilantro
- 2 teaspoons cumin
- 2 teaspoons ground coriander
- Salt and pepper to taste
Preparation:
Soak the quinoa in water for 10 minutes. Rinse. Cook as you would rice (1 cup quinoa and 2 cups water for about 20 minutes). Chill. Rinse black beans and add. Add chopped pepper, tomato, scallions, lime juice, cilantro, cumin and coriander and toss. Taste for flavour and add salt and pepper.
