Ingredients:
1 TBS olive oil
1.5 cups onions diced
2 TBS garlic minced
3/4 cup celery diced
3/4 cup carrots chopped
3/4 cup mushroom crimini sliced
2 cups potatoe cubed
1 cup lentils (we use 1/2 c red lentils & 1/2 c french green)
1/4 cup tamari
1 TBS thyme, dried
1 tsp sea salt
1/2 tsp pepper
6 cups water
Preparation:
- Saute onion in the olive oil for 3 – 4 minutes until clear.
- Add carrots, celery & mushrooms and saute for another few minutes.
- Add garlic, potatoes & lentils and saute for a couple of minutes.
- Add rest of ingredients: thyme, salt, pepper, tamari, water.
- Bring to light boil and then lower to a gentle simmer for about an hour with the lid on.
