- 1 cup Brown Rice Flour
- 3 Tb Tapioca Flour
- 1/3 cup Potato Starch
- 4 Tb dry buttermilk powder (sub coconut milk powder or soy if dairy free)
- ¼ cup Stevia Sugar (New Roots) or ½ cup sugar
- 1 1/2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp guar gum
- 2 eggs
- 3 Tb melted coconut oil or canola oil
- 1-2 cups water
In a bowl mix the dry ingredients together. Stir in eggs, oil, and water. Start with 1 cup water and add more if needed. Amount depends on whether you add other things such as flax meal, banana, blueberries, grated apple, etc. The options are endless and they always turn out really great!
Heat skillet with oil, I prefer coconut or butter as they are the most heat stable. Spoon batter into pan and cook until bubbles start to form. Flip and continue to cook until golden brown. Enjoy!!
