- 1 cup quinoa flour (teff works well too)
- 1 Tb psyllium husk
- 1 tsp sea salt
- 1 cup water
Preheat oven to 400 F. Combine flour, psyllium and salt. Add water, let sit for 5 min. Line a baking sheet with parchment paper, spread mixture on parchment, bake for 20 min.
This recipe is very versatile. If using for a pizza crust you can add some italian spices to the flour mixture before baking. Bake as usual then add toppings and bake for another 10 min. If making flatbread, add some nuts or seeds, spices, anything you want. I like to add sesame seeds on top. You could also make it sweet by adding cinnamon.
Makes a great open faced sandwich or simple snack.
Note** If doubling recipe, don't double the psyllium, it makes it too gummy, only use 1 ½ Tb instead of two.
