Ingredients:

  • 4 pitted dates soaked in hot water until soft (save water)
  • 2 TBS (or less) of date water, just enough to blend into paste
  • 2 mashed ripe bananas
  • 1 cup rolled oats
  • 1/3  cup ground almonds
  • 1/3 cup ground pecans
  • ½tsp vanilla
  • ½tsp baking powder
  • 2 TBS coconut oil, melted
  • ½tsp cinnamon

Preparation:

  1. Pre-heat oven to 350
  2. Soak dates in boiling water until soft (reserve soak water)
  3. Place jar of coconut oil in a bowl of hot water to melt enough for 2 TBS
  4. Mash bananas in a bowl
  5. Food process almonds in a meal
  6. Food process pecans into a meal
  7. Process dates with vanilla in a food processor adding just enough soak water to make a chunky paste
  8. Add ground nuts, oats, date paste, baking powder, cinnamon, & coconut oil to the mash banana
  9. Spoon onto a parchment paper lined baking sheet
  10. Bake at 350 for 12-14 minutes.
  11. The cookies will set up more as they cool. So transfer to a cooling rack and wait at least 10 minutes.
