Ingredients:
2/3 cup of uncooked quinoa
1/3 cups of water
3 TBS fresh orange juice
1 TBS lemon juice
1 TBS lime juice
1 TBS honey
Zest of small organic orange
2 carrots, shredded
1 beet, shredded
1 cup chopped toasted hazelnuts
1/4 cup currants
Preparation
Soak the quinoa in water for 10 minutes. Rinse. Cook as you would rice (1 cup quinoa and 2 cups water for about 20 minutes). Chill. Add carrot and beet. Mix dressing separate then add to quinoa. Add nuts and currants.
