- 2 lbs beets (cut into small pieces and roast with coconut oil at 375 for 45-60min)
- Juice of 2 lemons
- 1 Tbsp apple cider vinegar
- 4 cloves garlic
- 1/2 tsp sea salt
- Approx 1/2c organic olive oil (Maison Orphee) or to desired consistency
Blend it up in a food processor or vitamix! Dip your carrots, cucumber or whatever veggies in delightfully red delicious beets.
