Ingredients:
- 2.5 cups almond meal
- 3 eggs
- ¼ cup maple syrup
- ¼ cup coconut oil (melted)
- 1 cup grated carrot
- ½ cup pineapple, puree
- ½ tsp baking soda
- 1 tsp vanilla extract
Preparation:
- Put your canned or fresh pineapple in a food processor to puree.
- Place the rest of the ingredients in the food processor & process.
- Spoon into parchment baking cups.
- Bake at 350 for 20-25.
